Possibly my new favorite.
It reminds me of Panera’s Mediterranean Veggie Sandwich.

Awesome bread that your husband picks up for you even after sitting in an hour of traffic…

And the assembled sandwich.  Light and fresh, yet very filling and satisfying.  The key is to get good bread and good Greek Dressing.

Greek Salad Sandwiches
adapted from Martha Stewart Everyday Food

Ingredients:
1 c. canned chickpeas, rinsed and drained
Extra-Virgin Olive Oil
1 TBSP. lemon juice
1-2 TBSP fresh cilantro (you could use parsley if you don’t like cilantro)
1/2 of a small red onion
Good quality Greek Dressing
coarse salt
ground pepper
3 oz. crumbled feta (we used Mediterranean)
8 slices rustic bread (we used an Olive Bread and LOVED it)
1/2 medium cucumber, thinly sliced
1 tomato, thinly sliced

Directions:
1) In a food processor pulse the chickpeas, parsley, lemon juice and 1 TBSP. olive oil until finely chopped.  Season with salt and pepper.
2) In a small bowl, toss the red onion with enough dressing until coated.  Set aside.
3) In another small bowl, mash the feta with 1 TBSP olive oil.
4) Brush all slices of bread with Greek Dressing.  On 4 of the slices, spread chickpea mixture.  Top with the cucumber, tomato and onion.  Season with salt and pepper.  Spread the feta mixture on the remaining 4 slices of bread and place on top of sandwiches.
5) EAT AND BE MERRY!
